Archaeology of fermented drinks: the case of the chicha mesoamerican

The following study has the objective to analyze the archaeological ceramics (pots) recovered in Guachimontones, Mexico. In the absence of certainty about the job that was given to this artifact in antiquity, archaeometric techniques (chemical and starches) were applied to know about a specific application and subsequent operation within the social organization, taking as reference the idea that these jars used to prepare a fermented beverage. The results of the analysis indicated the use of the jars in the preparation of tejuino, complementarily comparison with ethnographic examples, where raw consumption alcohol- allowed us to infer the function of the beverage as a mechanism that allowed maintaining strong relations between the inhabitants of that space. The indicators suggest this functionality are: architectural structures emplaced around courtyards, provision and use of housing units, the presence of hearths, waste baskets, offerings (lithic and ceramics).
El presente estudio tiene como objetivo el análisis de cerámica arqueológica (tinajas) recuperada en el sitio Guachimontones, México. Ante la falta de certezas acerca del empleo que se daba a este artefacto en la antigüedad, se aplicaron técnicas arqueométricas (química y almidones) para conocer su uso específico y posterior funcionamiento dentro de la organización social, tomando como punto de referencia la idea de que estas tinajas sirvieron para preparar una bebida fermentada. Los resultados de los análisis indicaron el uso de las tinajas en la preparación de tejuino, complementariamente la comparación con ejemplos etnográficos —donde prima el consumo de alcohol— nos permitieron inferir en la función de la bebida como un mecanismo que permitía mantener sólidas las relaciones entre los habitantes de dicho espacio. Los indicadores que sugieren esta funcionalidad son: estructuras arquitectónicas emplazadas en torno a patios, disposición y uso de unidades habitacionales, presencia de fogones, basureros, ofrendas (líticas y cerámicas).
