The subject of this degree work is a Center of gastronomic qualification, in front of the study and diagnosis of the corridor of the avenue “10 de Agosto”, the project is located in the neighborhood Santa Clara, was identified problematic and potentialities In the study area, nodes with different vocations were proposed along avenue “10 de Agosto”, in order to reactivate this area of the city, the characterization of this node considers the current vocation of the neighborhoods of the study area already mentioned. The proposal of the gastronomic training Center was made based on the result of the analysis of coverage of educational equipment and training. It can be noted that there is no equipment that offers food sales spaces and in turn provides training workshops, currently the function of the equipment will be training and training but in the future will update regulatory knowledge governed by the Municipality of Quito regarding the subject of sale of food, in addition to offering classes with new culinary methods. As a result, a historical investigation and theories - concepts applicable to the aforementioned topic were carried out, as well as the study and analysis of references that allowed obtaining guidelines for the design of the equipment. Subsequently, architectural, urban, technological and environmental strategies were proposed, which, together with the aforementioned research, allowed the development of two mass plan alternatives, resulting in a project that considers optimal design and function parameters for the occupants of the equipment as well as the inhabitants of the neighborhoods of study.
El tema de trabajo de titulación es un Centro de capacitación gastronómico, frente al estudio y diagnóstico del corredor de la Av. 10 de Agosto, el proyecto se ubica en el barrio Santa Clara, se identificó problemáticas y potencialidades en la zona de estudio, se propuso nodos con diferentes vocaciones a lo largo de la Av. 10 de agosto con el fin de reactivar esta zona de la ciudad, la caracterización de este nodo considera la vocación actual de los barrios de la zona de estudio ya mencionados. La propuesta del Centro de capacitación gastronómico se realizó en base al resultado del análisis de cobertura de equipamientos educativos y capacitación. Se puede denotar que no existe un equipamiento que ofrezca espacios de venta de alimentos y a su vez brinde talleres de capacitación, actualmente la función del equipamiento será de formación y capacitación pero en un futuro actualizara conocimientos normativos regidos por el Municipio de Quito en cuanto al tema de expendio de alimentos, además de brindar clases con nuevos métodos culinarios. Por consecuencia se realizó una investigación histórica y de teorías - conceptos aplicables al tema señalado, además del estudio y análisis de referentes que permitieron obtener directrices para el diseño del equipamiento. Posteriormente se plantearon estrategias arquitectónicas, urbanas, tecnológicas y medioambientales que conjuntamente con la investigación antes mencionada permitieron elaborar dos alternativas de plan masa, dando como resultado final un proyecto que considera parámetros óptimos de diseño y función para los ocupantes del equipamiento como para los habitantes de los barrios de estudio.
