El palmito es un cultivo importante en el Ecuador, es exportado a varios países del mundo, siendo nuestro país el principal exportador de este vegetal, las plantaciones de palmito tienen un mismo fin el cual es entregar a las empresas encargadas de procesarlo y enlatarlo para su exportación al exterior, a los países donde existe un elevado consumo del mismo. Este trabajo de titulación trata de darle un mayor valor agregado al palmito mediante el estudio y desarrollo de subproductos con el objetivo de superar y mejorar, los productos actualmente encontrados en el mercado, aprovechando cada una de sus propiedades y nutrientes. Se ha desarrollado experimentalmente, tres subproductos, como son: palmito entero en Conserva (con ácido láctico), Dip y Ceviche, para luego ser evaluados por paneles organolépticos...
The hearts of palm are a very important cultivation in Ecuador, it is export to different countries around the world, our country is one of the main exporter of this vegetable, it has an essential purpose which is to processes and cannedit for exportation. This final work for qualification is going to give to the hearts of palm a value added by studying and making this new products of which goal is to increase the purchase and improve with the new ingredients using all of their properties and nutritious facts. These new products have been experimentally tested to allow me to create the hearts of palm canned food without citric acid, hearts of palm dip and hearts of palm ceviche after they have been tested by organoleptic panels.
