The project that is being developed at the present thesis is about the reengineering of La Chorrillana's restaurant service, the one that offers argentinean and chilean gastronomy with a nice sportive ambience. The restaurant is located at the Imbabura' province.The restaurant will be categorized as a tourist establishment in the category number three at the Canton Ibarra , the one that will be part of the province's tourist guide. During the opening period and the developing time, it has been verified some hypothesis about the management and services on it.Thru strong analysis, it proposed to get corrective actions in order to offer a better qualified product in the meal preparing, reducing the cost and timing preparation, raw material acquisition, internal customer training according with final customer requirements. After that, to introduce marketing strategies, which ones at the now days have been managed without successful and after can help as a prospective and strategic link, the planning activities will be reflected on the goals results according with operative and tactic planning in the medium term. Even that the result get since the last may 2012 has been no well without loss, it has been rigorously examined the behavior of gastronomic consumption in this city, given an opportunity for growth and profit for the restaurant, corrective processes and handling of the current reengineering, in this way, achieving a positioning and high economic performance.
El proyecto a realizar en el plan de titulación, constituye en la reingeniería de servicio del restaurante "La Chorrillana", el cual brinda gastronomía chilena y argentina, el mismo que posee un ambiente acogedor y una temática deportiva; ubicado en la provincia de Imbabura. Parte de este proceso es la categorización del restaurante a establecimiento turístico de categoría número tres del cantón Ibarra, el mismo que formará parte de la guía turística de la provincia. Durante el periodo de apertura y el transcurso de tiempo en desenvolvimiento, se han verificado ciertas falencias en la ejecución de gestión y servicio del mismo…
