Ecuador is a mega diverse country, rich in Flora and fauna, also it counts with one of a kind geographical composition in the world, thanks to these micro climates that exist in the country and the knowledge of their people, it's agricultural methods as well as its gastronomical culture are as varied as its citizens. In the following study there will be an analysis of the Ecuadorian gastronomical culture before the conquest of the Spaniards, their cooking methods, food preservation techniques, celebrations and rituals, as well as a study and identification of each ingredient, that later where gathered in a menu that not only did it try to please people, but also tell stories and talk about the Ecuadorian culture, all of these matching the demands of the actual markets as well as using the knowledge of the past to bring them back to the present.
El Ecuador es un país mega diverso, rico en fauna y flora, con una composición geográfica única en el mundo, con una amplia gama de micro climas que permiten que tanto la agricultura, como la cultura gastronómica, sean únicas en el mundo ya sea por su variedad, así también por lo especial de su gente. En este contexto, a continuación se presenta un estudio y análisis de la gastronomía Ecuatoriana que se desarrollaba tiempo antes de la conquista por parte de los españoles, sus métodos de cocción, técnicas de conservación, fiestas y rituales; así como también el estudio e identificación de ingredientes, que posteriormente son conjuntados en un menú que no solo busca complacer a las personas que lo degusten, sino también contar historias y abrir el espacio que permita hablar de la cultura ecuatoriana; todo esto acoplado a las exigencias de los mercados actuales e incorporando los conocimientos ancestrales, para traerlos de vuelta al presente.
