After several trends and changes that have marked the course of gastronomy in the recent years, it seems that the old techniques and styles are back after some failed attempts to modernize certain aspects that are pillars in gastronomy worldwide. After this failure, it's necessary to remember one of the kitchens that has had a major influence on other cultures and has been a mainstay in the growth and evolution of other cultures. It's for this reason that the following study aims at reviewing and reminding important aspects of the Italian cuisine and the history of some emblematic preparations of the Italian gastronomy such as pasta and pizza. To implement some of these elements, there will be an Italian menu at the restaurant Marcus Apicius, which will have a final report showing the results obtained during the period of time that the Italian menu was offered to the public.
Después de varias tendencias y modas que han marcado el curso de la gastronomía los últimos años, parece que se están retomando las viejas costumbres luego de algunos intentos fallidos por modernizar ciertos aspectos que son pilares en la gastronomía a nivel mundial. Es por este tipo de cambios que es necesario recordar a una de las cocinas que ha tenido gran influencia en otras culturas y que ha sido fundamental en el crecimiento y evolución de otras culturas gastronómicas. Es por este motivo que el presente estudio tiene el propósito de repasar y recordar ciertos aspectos importantes de la gastronomía italiana y la historia de dos preparaciones emblemáticas dentro de la misma como lo son la pasta y la pizza. Para poner en práctica algunos de estos elementos se realizará un menú italiano en el restaurante Marcus Apicius, el cual tendrá un informe final que mostrará los resultados obtenidos durante el periodo en el que el menú italiano será ofrecido al público.
