El presente estudio es una propuesta de un Modelo de Gestión por Procesos para la deshidratación del mortiño con el objeto de establecer las directrices de la gestión empresarial, que soporte la toma de decisiones en las empresas que se dedican a la deshidratación de frutas y lo puedan adoptar e implantar en su planta de producción. La idea se origina en direccionar a una empresa un enfoque por procesos en la gestión de sus actividades productivas, que va desde la recepción de los componentes y materiales hasta el envío del producto al cliente con el fin de medir su eficiencia en tiempo, movimiento y costo; logrando de esta manera tener resultados que identifican oportunidades de mejora. El proyecto se estructura de la siguiente manera: En el capítulo I, se detalla el problema y se justifica el motivo de la investigación; en el capítulo II, se detalla una importante información como sustento teórico referente al modelo de gestión por proceso; En el capítulo III, se esquematiza la metodología de la investigación; En el capítulo IV, se presenta los resultados encontrados , su análisis e interpretación de los datos; en el capítulo V, se encuentra la propuesta planteada y el capítulo VI, las conclusiones y recomendaciones, además de incluir las referencias donde se identificará cada una de las publicaciones que han sido consideradas en el proyecto de la tesis.
The present study is a proposal of a Process Management Model for the dehydration of the mortiño, with the purpose of establishing the guidelines of the business management, that supports the decision making in the companies that are dedicated to the dehydration of fruits and Can adopt and implement in their production plant. The idea originates in directing to a company a process approach in the management of its productive activities, from the reception of the components and materials to the sending of the product to the client, in order to measure its efficiency in time, movement And cost, thus achieving results that identify opportunities for improvement. The project is structured in the following way: In chapter I, the problem is detailed and the reason for the investigation is justified; In Chapter II, an important information is detailed as theoretical support regarding the management model by process; In chapter III, the methodology of the research is outlined; In Chapter IV, the results are presented, their analysis and interpretation of the data; In chapter V, the proposed proposal and chapter VI, the conclusions and recommendations, and include the references where each of the publications that have been considered in the project of the thesis will be identified
